Honey glazed apple spice cake
  1. In a small bowl combine honey, 1/3 cup melted butter, corn syrup, lemon zest, and lemon juice. Pour into well-greased round 9-inch pan.
  2. Arrange apple slices on top of honey mixture. Sprinkle almonds over apples and set aside.
  3. In a food processor, finely grind that granola. Transfer to a large bowl and stir in flour, brown sugar, baking powder, baking soda and salt, cinnamon, nutmeg and ginger. Mix well.
  4. In a medium bowl combine buttermilk, eggs, 1/4 cup melted butter and vanilla.
  5. Create a well in the center of dry ingredients. Add wet ingredients. Add raisins and stir until just moistened (batter should be lumpy).
  6. Spoon batter evenly over apple and honey mixture. Bake at 375°F for 25 minutes, or until a toothpick inserted in the center comes out clean.
  7. Remove from oven and immediately invert cake onto a serving plate. Cool 10 minutes. Serve warm drizzled with additional honey.
