Oven-Fried Granola Chicken Tacos with Mango Crema

  1. Preheat oven to 425°F. Arrange a wire rack of a large baking sheet. Coat rack with cooking spray and set aside.
  2. In food processor, pulse granola until finely ground. Place ground granola in a shallow bowl and season with salt and pepper.
  3. Add egg white to another bowl and whisk.
  4. Dip chicken in egg and then coat with granola crumbs.
  5. Arrange on prepared baking rack and spray lightly with cooking spray. Bake 12-15 minutes or until golden and cooked through.
  6. While the chicken bakes, prepare the crema. Blend all crema ingredients in a food processor until smooth.
  7. To assemble, spread avocado on the tortilla shells, top with chicken, radishes, crema and cilantro. Serve immediately.
