Peanut Butter Cookies

Recipe Directions:
  1. Place 1 cup of granola (remove add-ins and save for other cup) in a food processor and pulse until it becomes a fine, sandy powder. Keep the other 1 cup whole with add-ins.
  2. In a bowl, stir the peanut butter, sugar, and egg together until smooth.
  3. Stir the processed granola powder into the wet mixture first to form a dough. Fold in the whole granola last.
  4. Roll the dough into 1-inch balls and place them on a baking sheet. Press down slightly with a fork or your palm to flatten.
  5. Bake at 350°F for 10–12 minutes.
  6. Let the cookies sit on the hot baking sheet for 5–10 minutes to firm up before moving them to a cooling rack.
